Cactus Blue Restaurant on London's fashionable Fulham road is a sophisticated and up market South-West American restaurant and bar. A stunning under-lit marble bar, primitive American artefacts, paintings and fabric give the restaurant a cool and buzzy atmosphere. Food is an eclectic take on tapas and Mexican - we're talking modern, fresh ideas. Signature dishes include Peking duck tortilla wraps with apricot and ginger jam, South Western gravadlax with avocado tamale, sweet cured salt crusted duck breast with jack cheese parsnip souffle, as well as delicious chicken or beef fajitas with guacamole, pico salsa, sour cream and flour tortillas. Cactus Blue also has a buzzy, lively bar, popular with Chelsea locals, that serves stunning cocktails as well as a range of over 50 tequilas. Service is great and the staff are happy to explain anything on the menu or to help recommend a tequila. If you think you don't like tequila,try one here - the smooth, tangy taste of the sipping tequilas makes all the difference. My tip is try one of the sauzas . . . a heavenly way to end a fantastic meal.
